INGREDIENTS: 1/8 cup rice vinegar | 1 tbsp whole grain Dijon mustard | 1 tbsp honey | Sea Salt | Freshly ground black pepper | 1 shallot, thinly sliced | 1 large cucumber sliced with a veggie peeler | 1 tbsp chopped dill
DIRECTIONS: Add vinegar, mustard, honey, salt and pepper to a jar with a lid and shake. Add the shallots. Let rest covered with 30 minutes. Stir together the cucumber and dill in a bowl; drain excess water. Toss salad with dressing (I added some yummy cold cuts for a light meal). Serve!
